What happens when you combine food, science and research? You get a team of passionate foodies working on some complex problems, aspiring to create the most delightful food experiences – that’s the New Supply vertical at Swiggy. But what does it take to orchestrate this in reality? COO of New Supply at Swiggy, Joseph Cherian spills the beans.

What has your experience at Swiggy been like thus far?

When I joined Swiggy, New Supply was a team of five people, with just five kitchens. Today we stand at a team of thousands, with more than 500 kitchens across Access and Private Brands!

With Swiggy, I’ve had the opportunity to transform the way the kitchens operate, enhance capabilities, and produce best-in-class results, all at a disruptive pace. Changing the way India eats was an audacious goal, and that’s exactly what we’re doing.

Can you share some of the exciting things the team is working on within the kitchens?

We have some interesting work happening on the usage of AI and machine learning at our kitchen sites. Think tech-enabled kitchens that are truly smart!

Another huge area of focus now is sustainable packaging. We are closely working with several vendors to make it not only accessible, but affordable. Meanwhile, we’ve already taken steps to build eco-friendly kitchens which are carbon- and water-neutral!

What keeps you ticking outside of work?

My biggest passion is biking – it brings me closer to all my other passions like exploring food, cultures and nature. I’ve biked through the rugged peaks of Leh and the hidden trails of the North East with my fellow riders from the ‘Bikers Gourmet Club’. We’re a bunch of adventurous guys who combine riding with sourcing exotic food!

If you were allowed to eat only one dish for the rest of your life, what would that be and why?

There’s this Malayali dish called Matti Fry, which is really close to my heart. Everytime I visit my hometown in Kerala, my mom ensures there is Matti Fry on the table no matter the time of day!

What, in your opinion, defines a true Swiggster?

Unconstrained thinking paired with determination tops the list. Since we’re in the business of disruption, boundless thinking helps one find solutions which could be game-changing.
